Honeydew honey is a dark, thick honey produced by bees from honeydew, a sugary substance that bees collect from insects such as aphids or leafhoppers, which feed on plant sap.

Unlike floral honey, honeydew honey has a stronger, more robust flavor, with woody, resinous, and sometimes caramel or licorice notes.
